Emanuel Ashiedu’s Bold Vision Revives Sam’s Southern Eatery on Central Avenue
Some spaces are more than just walls and floors—they’re chapters waiting to be rewritten. At 6600 W. Central in Wichita, Emanuel Ashiedu is crafting the next chapter for Sam’s Southern Eatery, bringing the beloved Southern franchise back to life with a fresh vision and renewed purpose.
This isn’t just a reopening; it’s a revival. The first attempt to establish Sam’s at this address in 2020 was short-lived, shuttering within a year due to the pandemic’s challenges. Now, under Ashiedu’s experienced leadership, the restaurant is poised for a comeback that celebrates community, comfort, and Southern flavors.
Breathing New Life into an Iconic Space
Ashiedu, alongside his brother-in-law Charles Scott, has a proven track record with Sam’s Southern Eatery. Together, they’ve built successful locations in Wichita, Hutchinson, and Salina. When the opportunity arose to revisit the 6600 W. Central address, Ashiedu didn’t hesitate.
This time, the restaurant will occupy the building’s east-side section, a cozy yet inviting space with seating for 30 to 40 diners and an expansive patio for outdoor enjoyment. The smaller, more intimate setup reflects Ashiedu’s strategic focus on creating a personalized dining experience.
“This space has history, and we’re here to honor that while bringing something fresh and exciting to the community,” Ashiedu said.
Southern Comfort, Simplified
The new location will showcase the Southern soul food that Sam’s Southern Eatery is known for, albeit with a streamlined menu. Customers can expect favorites like crispy fried catfish, succulent shrimp, Po’ Boy sandwiches, fried green tomatoes, and crab cakes.
The addition of patio dining introduces a new dynamic, offering diners a relaxed, sunlit setting to savor their meals.
“Our focus is on quality and consistency,” Ashiedu said. “Every dish, every detail—it’s about giving our guests a memorable experience.”
A Comeback Rooted in Resilience
The building’s past is a testament to resilience. After the original Sam’s Southern Eatery closed in 2020, the space hosted several concepts, including plans for Mama Deaux Southern Kitchen by property owner Sam Eddine. However, staffing challenges left the east-side section vacant—until now.
Ashiedu’s decision to take over the lease marks a turning point. With his extensive experience and commitment to excellence, he’s turning the challenges of the past into opportunities for the future.
“We’ve learned from the past and are building something stronger,” he said. “This isn’t just about reopening—it’s about redefining what’s possible.”
A Legacy of Southern Hospitality
Sam’s Southern Eatery, founded in 2008 in Shreveport, Louisiana, has grown into a national favorite with over 50 locations. The franchise is celebrated for its hearty portions, affordable prices, and authentic Southern dishes, from fried oysters to fish platters.
Ashiedu’s connection to the franchise runs deep, driven by a passion for delivering exceptional food and service. His leadership ensures that Wichita’s Sam’s Southern Eatery locations remain true to the brand’s values while adapting to local tastes.
A Look to the Future
The reopening of 6600 W. Central is just the beginning. Ashiedu and Scott are already scouting locations on Wichita’s east side, aiming to expand the franchise’s reach and make Southern comfort food more accessible across the city.
“When we find the right building, we’ll be there,” Ashiedu said. “Wichita deserves more places where people can come together over great food.”
A Fresh Start for Wichita Diners
With its upcoming opening, Sam’s Southern Eatery at 6600 W. Central is set to become a destination for Southern cuisine lovers. Under Emanuel Ashiedu’s guidance, the restaurant is more than a comeback—it’s a statement of resilience, community, and the enduring appeal of comfort food.
For diners, it’s a chance to enjoy authentic Southern flavors in a warm, welcoming space. For Ashiedu, it’s an opportunity to turn a once-challenged location into a thriving hub of food and fellowship.
“Food has a way of bringing people together,” Ashiedu said. “That’s what Sam’s Southern Eatery is all about—building connections, one meal at a time.”
